An indigenous red rice variety the Baiga have grown for generations on rain-fed forest plots, hand-pounded to keep the red bran intact. Earthy, nutty, and far richer in fibre than polished white rice.

Good to know: Soak 30 minutes before cooking and use a little extra water — the bran needs time to soften.
