Kodo (kodra) is a hardy millet the Gond have eaten for centuries — grown without irrigation or chemicals on forest-edge fields. Light, gluten-free, and gentle on blood sugar.

Good to know: Cook like rice (1:2.5 water). Wonderful as a khichdi or a warm breakfast porridge.
